Connemara Meadow Preserve
Dinner under the stars to celebrate local food, local farms and natural space
The Connemara Conservancy invites you to join us for an elegant evening of food, fun and friends under the stars in the Connemara Meadow Preserve. For the fifth year, Into the Meadow brings together local chefs and locally farmed food to create an outdoor dining experience for those who believe in Connemara's mission of preserving and protecting the natural beauty of North Texas.

As strong supporters of local farmers, ranchers and privately owned specialty foods businesses, Connemara believes that the preservation of family owned land and business creates a culture where integrity, tradition, and authenticity thrive.

This year's Into The Meadow will highlight the culinary creations of award-winning chef Kent Rathbun. Since opening in 1999, Chef Kent's five-star restaurant, Abacus, has repeatedly been recognized as a pinnacle of fine dining. Kent's second concept, Jasper's, has been named one of Esquire Magazine's Top 20 Best New Restaurants in America and his newest venture, KB's, has become one of the premier spots for hosting wedding receptions, birthday parties, business functions and more.

Kent's roots are firmly set in food, starting as an apprentice at La Bonne Auberge, a five-star French restaurant located in Kansas City, Missouri. In addition, he worked at Mr. B's in New Orleans, American Restaurant and Milano in Kansas City, The Mansion on Turtle Creek in Dallas and the Landmark Restaurant in Dallas' Warwick Melrose Hotel.

He has cooked at the James Beard House in New York on several occasions and was nominated four times as the James Beard Foundation's Best Chef: Southwest. He frequently appears on national TV shows and in 2008 competed on Food Network's hit series "Iron Chef America" where he defeated grill master Bobby Flay in a frenetic culinary battle.

The evening's events also include an auction, live music and dancing.

Over the past decade, Texas has lost more acres of open space to development than any other state. By supporting Into the Meadow you are supporting the efforts of the Connemara Conservancy, a regional land trust working with landowners, local governments and forward-thinking developers on land preservation. Today, Connemara protects more than 5,000 acres throughout North Texas. The Meadow Preserve serves as an outdoor classroom for a wide range of programs, nature events and restoration activities designed to educate area families, students and other interested individuals on the importance of land conservation.
